Matchaeco | Vegan Matcha Brownies

Ingredients

  • 1 cup vegan butter, melted
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 flax eggs (see note)
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 2 tablespoons matcha powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup vegan chocolate chips

Dont forget to pick up your matcha!

Instructions:

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8x8 inch baking pan.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the flax eggs one at a time, then stir in the vanilla.
  3. In a separate bowl, whisk together the flour, matcha powder, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the chocolate chips.
  4. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely before cutting into squares.

Notes:

  • To make a flax egg, combine 1 tablespoon ground flaxseed with 3 tablespoons water in a small bowl. Let sit for 5 minutes, then use as directed in the recipe.
  • For a more intense matcha flavor, use 3 tablespoons matcha powder.
  • To make these brownies gluten-free, use gluten-free all-purpose flour.
  • To make these brownies dairy-free, use dairy-free chocolate chips.
