Ingredients
- 1 cup vegan butter, melted
- 1 cup granulated sugar
- 1/2 cup packed light brown sugar
- 2 flax eggs (see note)
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 2 tablespoons matcha powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup vegan chocolate chips
Dont forget to pick up your matcha!
Instructions:
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8x8 inch baking pan.
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the flax eggs one at a time, then stir in the vanilla.
- In a separate bowl, whisk together the flour, matcha powder, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the chocolate chips.
- Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely before cutting into squares.
Notes:
- To make a flax egg, combine 1 tablespoon ground flaxseed with 3 tablespoons water in a small bowl. Let sit for 5 minutes, then use as directed in the recipe.
- For a more intense matcha flavor, use 3 tablespoons matcha powder.
- To make these brownies gluten-free, use gluten-free all-purpose flour.
- To make these brownies dairy-free, use dairy-free chocolate chips.
